Sorrel is one of the most spicy vegetations in its family. There are about two hundred species which naturally grow in middle climate areas on the Northern half round. Nowadays, sorrel is introduced world wide.
Salicornia sp. belongs to the family of the Chenopodiaceae (Amaranthaceae) A plant family that holds among it vegetables like spinach, beet. The young green tips are harvested in a very young stage. That's why we call them sometimes sea asparagus. Besides salts (sodium, potassium and calcium) Salicornia accumulates a lot of minor elements (Iron, Iodium, Cupper...) Fresh Salicornia can be eaten raw or quickly fried . The vegetable fits well with fish dishes.
